Small lots from farmers we can name, roasted on a 1962 drum roaster we rebuilt ourselves, in your cup within a week of the roast. That is the whole trick.
Fresh is the only spec that matters.
Supermarket coffee is six months old before you open it. Ours is roasted every Tuesday, rested exactly four days, and shipped in the same week's post. We print the roast date on every bag in type you can read without glasses, because the date is the product. Everything else, the origin, the process, the notes, is detail on top of fresh.
