We grow the barley, malt it on our own floor, and fill into oak we chose ourselves. Four thousand casks are asleep in the warehouse and none of them will be bottled before they are ready, whatever the order book says.

How it is done

BARLEY

120 acres

Grown on the estate, cut in August, and never bought in when the harvest is poor.

MALTING

7 days

Turned by hand on the floor for seven days. It is slower and it is better.

MASHING

One mash a day in an open tun, worked at the temperature the brewer decides that morning.

FERMENTATION

96 hrs

Ninety-six hours in Oregon pine. Long enough to build the fruit rather than just the alcohol.

DISTILLATION

2 stills

Two copper stills, run slowly, with the cut called by the stillman and not by a meter.

Into oak we selected in Jerez and Kentucky, then into the warehouse, then left alone.
